Coffee is to be no longer underrated. It’s no longer that set of tin cans lining the common supermarket shelf and will likely no longer be so disrespected. Coffee is now the pride of the same connoisseur who for so many millennium prized and cherished wines and chocolates.

Coffee is finding its own now. It’s being cautiously paired with only the desserts that are a perfect match; or the right quality chocolate that enhances just the right nuance of coffee. Coffee is a ritual, a feast in itself.

One of the nation’s leading authorities on nutrition said most people would not have expected him to write this, but this is what he wrote in one of his books, “Coffee is a remarkably safe beverage. Its dubious health history, which stretches back hundreds of years, is more image than substance.”

The author of that statement explains that researchers produced many studies of coffee drinkers who came to a bad end. But in retrospect, these studies proved to be defective. The bad end was caused by the subjects’ smoking, not by their coffee drinking. Now experts agree that coffee is a safe and even healthy beverage. This may be good news that ranks with the recent revelation that dark chocolate (the darker, the better) is loaded with healthful antioxidants and - in small amounts - to avoid a calorie problem - is even upgraded to a heath food.

Coffee has been enjoyed by millions of people around the world for at least a thousand years. Apart from it’s wonderful aroma, the attraction of coffee lies in its properties as a stimulant.

In many people, coffee enhances alertness, concentration and mental and physical performance. This is due to its caffeine content. The average cup of instant coffee contains about 60mg caffeine while filter coffee contains about 85mg. For those who are sensitive to caffeine and prefer decaf blends, the decaffeinated beverage contains only 3mg.

To address the first-air-you need to store your beans in an air-tight container in a cool, dark place-NOT the refrigerator. (Unopened beans can be safely stored in the freezer for up to 3 months.) Some coffee aficionados go so far as to store a small amount of coffee that they’ll use in a few days’ time so they don’t continually open a larger bag & expose it to the flavor-destructive element of oxygen.

Each year coffee is normally harvested during the dry season only, when the coffee cherries are very bright red, glossy and firm enough to be harvested. Ripe cherries could be either picked by hand, stripped from the tree with both unripe and overripe coffee beans or even all the beans could be collected using a harvesting machine. These processes are known as careful picking, stripping and mechanical harvesting, respectively.
